Lemon Rice 🍋🍋

. Lemon Rice 🍋🍋

We always think of fried rice on special occasions because that's what we're always tempted to make. This type of rice, which is an Indian type of rice, is very delicious. This type of rice is enjoyed with skim milk.  I grated the cucumber peel and added a teaspoon of salt, pepper and lemon juice to the skimmed milk. If you have pan-toasted meat or fish, it is even more delicious.

Ingredients

Two cups of cooked basmati rice (cook it with a little turmeric and salt so that it is not mushy)

1 chopped onion

Ginger garlic paste

01 teaspoon of mustard

Caramel

Cashew nuts/peanuts

02 tablespoons of oil (those who like a spicy taste should use spicy)

01 dried chili pods, cut in half

03 chopped raw chili pods

50ml lemon juice (500g rice)

01 teaspoon of sugar

Salt and pepper to taste

Chopped coriander leaves  A little

Method of preparation

Put the pan on the stove and add oil and when it is hot, add the mustard. Then add the ginger garlic paste and curry leaves. When they are fried, add the big onion, dried chilies, green chilies, cashew nuts and let them fry. Now add the rice and stir. After a while, add the lemon juice and salt and pepper powder to taste and add a teaspoon of sugar. After a while, a good aroma will come. Then turn off the stove and add the coriander leaves and stir. That's it. This is a delicious rice that can be made simply without any sauces or seasonings. If you like, try it.

Mixed fried rice āļ¸ිāļš්⎃්āļŠ් ⎆්‍āļģāļēිāļŠ් āļģāļēි⎃්

 Mixed fried rice

⁣Fried rice is not a dish that we all like to eat the most.. And it can be prepared in many ways.. Let's make a fried rice that can add beauty to the table on a festive occasion. This mixed fried rice..

Note:- I only present chicken as the meat for this type of rice.. Add pork/beef according to your taste.

 Ingredients

(These quantities are enough for four people)

Two cups of cooked basmati/keeri samba rice

150g of any boneless fish

200g of boneless chicken

150g of shrimp

150g of green onions

Two or three sausage casings

Two eggs

1 teaspoon of bouillon or chicken stock powder

About two teaspoons of ginger garlic paste

Soy sauce and oyster sauce

Finely chopped green onions and carrots

A little salt and pepper to taste

Preparation

First, cook the rice grains separately and let them cool. It is best to keep the cooled rice in the refrigerator for about two hours.  If you are cooking rice with basmati rice, add a little sesame oil if you have it. It will give the rice a nice shine when cooked.

Cut the meat and fish into thin slices, season the shrimp and prawns separately. I have them in the fridge for two hours.

Now heat a pan, add some oil, add the ginger garlic paste and fry the seasoned meat and fish. (It tastes better when the meat and fish are fried in the same oil as the rice. So don't fry them separately. You don't need a lot of oil.) Now add the sliced sausages. Then add the two eggs and mix well. Add the soup cube or chicken stock powder and carrots to this. Add the rice and sprinkle some soy sauce and oyster sauce and fry well. To minimize the use of the spoon, hold the handle of the pan and shake it to fry the rice well. You will hear the sound of the rice grains popping.  That's the secret to restaurant flavor. Add salt to taste. I add a pinch of pepper powder. Finally, turn off the heat and add the chopped onion leaves.

Nasi goreng āļąා⎃ි āļœුāļģාāļą්

 Nasi goreng

Nasi goreng

Nasi goreng is the real name of this dish in Sri Lanka. This is a type of Indonesian fried rice and is very tasty.

This type of rice is very popular in Indonesia as well as Singapore.

This type of rice is prepared in various ways and in Sri Lanka it is mostly prepared using vegetables and chicken, shrimp paste.

The specialty of this dish is that the rice is served with a fried egg.

It also includes fried shrimp, chicken satay and pineapple, tomato and cucumber slices.

Also, rice that has been refrigerated for a day is used to prepare this rice.

 Ingredients

2 cups cooked rice (Basmati/Long grain rice)

150g chicken, finely diced

100g peeled and chopped shrimp

100g squid, cut into rounds

100g carrots, diced

100g cabbage, finely chopped

100g green onion, finely chopped

1 large onion, chopped

2 red chilies, chopped (I used bell peppers with seeds removed. If you use bell peppers, use half a bell pepper)

2 teaspoons ginger garlic paste

Soy sauce, fish sauce

Salt and pepper powder to taste

1 tablespoon butter or oil

2 beaten eggs

1 tablespoon chili paste

This quantity serves 4 people Enough

Method of preparation

First, put the pan on the stove and add oil or butter. When it is hot, add the chicken, shrimp and squid and fry them well. When they are fried, add the carrots, onions and red chilies. Now make a well in the middle of the pan and add the beaten eggs. Scramble the eggs. Add the chopped cabbage and chili paste to it and mix well. (There are nasiguran mix packets in supermarkets. It tastes better this way.) Now add the rice and fry it well. About five minutes.

(Keeping the rice in the refrigerator for a day adds a good flavor. It can also be fried well. I bought a Thai type of rice. That type is also very tasty. Kielce Super has it)

Then add soy sauce and fish sauce.

(Sweet soy sauce is available in supermarkets. It comes to Sri Lanka from Indonesia. It is used in restaurants)

Now sprinkle salt and pepper powder according to taste and if it seems too spicy for the baby, sprinkle a little sugar and turn off the heat and add the onion leaves. Now serve as mentioned above.

Cheesy Chicken, Rice & Broccoli -

  Chicken, Rice & Broccoli -

Ingredients:

1 cup white rice

4 boneless chicken breasts

2 tablespoons olive oil

1 teaspoon salt

1/4 teaspoon pepper

2 1/2 cups water in which the chicken was cooked

1 cup red bell pepper, finely chopped

2 1/2 cups broccoli, finely chopped

2 cups cheddar cheese

How to make:

First, cut the meat into fairly large pieces.

Then, boil the meat.

Now, heat some oil in a pan. Add the boiled meat, salt, and pepper to it and let it cook for a while. Don't forget to stir it occasionally while cooking. It will take 4-6 minutes to cook.

Then add the rice and the water in which the chicken was cooked to this mixture and cook for 10-15 minutes until the water boils. At this time, you need to reduce the heat on the stove.

While cooking in this way, after absorbing all the water in the pot, add the bell pepper and broccoli. Add a cup of cheese along with it.

Now close the lid of the pot and cook for about 8-10 minutes.

After the vegetables are cooked, you need to remove it from the stove.

Finally, all you have to do is add the remaining cup of cheese on top of the mixture and leave it covered in the pot for a while until the cheese melts. That's it! We have cooked our delicious rice. Now all you have to do is eat it.

2. Add the green peas and broccoli, cooking them lightly. Remove the vegetables from the pan and set aside.

Making the Fried Rice:

1. Heat the pan again with 2 tbsp sesam

e oil. Add the ginger and garlic, sautÊing until fragrant.

2 Add the cooked rice to the pan and stir well to combine with the ginger and garlic.

3. Crack the eggs into the pan, scramble them, and mix them thoroughly with the rice.

4. Add the sautÊed vegetables and mix well.

5. Pour 3 tbsp of soy sauce over the rice and stir everything together until evenly coated.

Cooking the Chicken:

1. Heat a separate pan with 1 tbsp sesame oil. Add the marinated chicken strips and cook until fully done.

2. Pour the remaining marinade over the chicken and stir well. Cook until the sauce thickens slightly.

3. Sprinkle sesame seeds over the chicken before removing it from the pan.

Final Touch:

1. Place the fried rice on a serving platter. Arrange the cooked chicken strips on top of the rice.

2. Garnish with chopped spring onions and additional sesame seeds for a flavorful and visually appealing dish.
